Introduction

Andaliman (Zanthoxylum Acanthopodium DC), a plant native to North Sumatra, has been widely used as a spice in cooking due to its distinctive taste. In this study, we will discuss the application of the Microwave Assisted Hydrodistlation (MAHD) method for the extraction process of essential oils from Andaliman plants. Research Methodology

This study aims to evaluate the application of MAHD techniques in Andaliman oil extraction with various operational variables. The variables tested include microwave power (180 W, 300 W, and 450 W), extraction time (60 minutes, 75 minutes, and 90 minutes), and the ratio of the solvent to the mass of Andaliman (6: 1, 8: 1, and 10: 1). For the analysis of extraction results, the method used is an analysis of oil composition using GC-MS (Gas Chromatography-Mass Spectrometry), Analysis of Functional Clusters with FTIR (Fourier Transform Infrared Spectroscopy), and testing the physical properties of oil based on SNI 06-3953-1995, which Includes color tests, specific gravity, and refractive index.

Results and Discussion

The results showed that the increase in microwave power and extraction time contribute to an increase in Andaliman oil yield. Conversely, an increase in the ratio of solvents to the mass of Andaliman actually causes a decrease in the oil yield produced. In the test, the highest Andaliman oil yield was obtained in optimal conditions with a microwave power of 450 W, extraction time for 90 minutes, and the ratio of solvents to masses 6: 1, which was 1.68%. The oil produced contains 58.29% Geranyl acetate and 25.72% is limonene, with the main compound groups detected are esters and alkene silko.

The analysis showed that Andaliman oil meets SNI 06-3953-1995 standards, with a density of 0.910 gr/cm³, the refractive index of 1,470, and 80% alcohol solubility in the ratio of 1: 2.5. This shows that the quality of Andaliman oil produced not only meets technical requirements, but also has the potential as raw material for the food and cosmetics industry.

This study confirms that the Microwave Assisted Hydrodistlation (MAHD) method has excellent potential in the process of extraction of essential oils from Andaliman. The application of this method not only increases extraction efficiency but also maintains the quality of the oil produced.
