Introduction

Hygiene is a crucial aspect in food processing to prevent bacterial contamination. Milk, as one of the food products that is vulnerable to bacterial pollution, especially Salmonella sp., requires more attention in the milking process. This study aims to evaluate personal hygiene from cow's milk rawers and check the content of Salmonella sp. in dairy cow's milk taken from several livestock locations in the city of Medan.

Personal hygiene is a critical factor in dairy farming, as it directly affects the quality of milk produced. The milking process involves direct contact between the milk rawer and the cow, making personal hygiene a vital aspect to prevent bacterial contamination. Inadequate personal hygiene can lead to the introduction of bacteria, such as Salmonella sp., into the milk, posing a risk to consumer health.

Research Methodology

The research method used in this study is descriptive. This study involved observations and direct interviews with the personal hygiene of milk rawers, sanitation of cow pens, equipment cleanliness, and the cleanliness of the cow itself. To find out the quality of milk, researchers conducted an examination of Salmonella sp. at the Regional Health Laboratory Center of North Sumatra Province.

Results and Discussion

The results showed that the level of personal hygiene of milk rawers can be categorized as well at 40% of respondents, also quite good at 40%, and bad at 20% of respondents. All farms (100%) still use manual milking techniques. In addition, sanitation in dairy farms shows that half of the farm (50%) is in good condition. Laboratory test results show that cow's milk from three farms is free from Salmonella sp. bacteria, meets the established quality standards. However, another farm shows positive results, which means milk from the place does not meet quality standard standards.

The findings of this study highlight the importance of personal hygiene in dairy farming. The results suggest that there is a need for improvement in personal hygiene practices among milk rawers, as well as sanitation in dairy farms. The use of manual milking techniques may also contribute to the risk of bacterial contamination.

Recommendations

Based on the results of this study, it is recommended that the manager of the dairy and milk farm business increases attention to hygiene and sanitation. The Animal Husbandry Service is expected to provide sustainable guidance and supervision of livestock business, especially in terms of hygiene and milk sanitation. In addition, consumers are also advised to always choose dairy cow's milk that has been pasteurized to reduce the risk of bacterial contamination.
