The results of stage I indicated that there was a significant interaction (p <0.05) between the dose of additional sugar and the fermentation time to the pH, total acid, and total lab, but there was no interaction (p> 0.05) between the dose of additional sugar and time fermentation of water content. The results of phase II showed that the addition of sauerkraut fluid in drinking water had a significant effect (p <0.05) on duck performance and had no significant effect (P> 0.05) on the quality of duck meat.

The results of this study indicate that the addition of sauerkraut fluid can be a good alternative to improve the performance of Peking ducks without sacrificing the quality of the meat. This is important considering the use of antibiotics in animal husbandry is increasingly limited due to the potential for antibiotic resistance.
