Introduction

Results

Our results showed that the cooling time of Nira water had a very significant effect on water content, pH, viscosity, TSS, and organoleptic values (color, aroma, and taste) of liquid palm sugar. However, the length of cooling did not have a significant effect on ash content. Similarly, the length of storage also showed a very significant effect on water, pH, viscosity, TSS, and organoleptic values, while the effect on ash content was not significant.

Interaction between Cooling Time and Length of Storage

We also found that the interaction between the duration of cooling and the length of storage had a very significant effect on water content and viscosity. In addition, there was a significant effect on pH, but not significantly on ash content. This study found that a combination of 0 days of cooling and 0 days of storage produced the best quality liquid sugar.

The quality of liquid palm sugar is strongly influenced by the cooling and storage process. The right cooling process can reduce water content, so that it can extend the shelf life of the product.
