Introduction

Results

However, the interaction between the type of flour and the concentration of chitosan did not have a significant effect on all parameters, except on the organoleptic value of the texture. Specifically, wet noodles made using cassava flour with a concentration of chitosan 200 ppm showed better quality and were more accepted by consumers.
