The parameters analyzed in this study included water content, ash content, protein content, fat content, carbohydrate content, crude fiber content, color index (° hue), extension, beta carotene content, water absorption capacity, and hedonic organoleptic scores for color, aroma, taste, texture, and level of general acceptance.

Results

The results of this study showed that the ratio between wheat flour and puree carrots had a significant effect on various parameters such as water content, ash, protein, fat, carbohydrates, coarse fiber, color index, beta carotene content, water absorption capacity, and organoleptic scores. In addition, the addition of tofu pulp flour also showed a significant effect on the same parameters, especially on taste. The results also showed that dried noodles with the best quality characteristics come from a mixture of W3A2, namely the ratio of flour and carrot puree of 80:20 with the addition of tofu pulp flour of 2%.
