The study was conducted in June-August 2010 at the Food Technology Laboratory, Faculty of Agriculture, University of North Sumatra, Medan. The two main factors studied were the composition of wheat flour: pumpkin flour (80: 20%, 60: 40%, 40: 60%, and 20: 80%) and type stabilizers (without stabilizers, Arabic Gum, CMC, and Tween 20). The parameters analyzed included water content, ash content, beta -carotene content, and organoleptic values (color, aroma, taste, and texture).

Results

The results showed that the composition of flour and pumpkin flour had a very significant effect on all parameters. The type of stabilizer also has a very significant effect on beta -carotene levels and organoleptic values (aroma and texture). The combination of flour composition and pumpkin flour and the type of stabilizer gives a significant effect on the levels of beta -carotene and the organoleptic value of the texture.

The use of tapioca flour as a substitute for some wheat flour has a significant impact on the texture and water cookies content. Tapioca flour has the property of absorbing water that is lower than flour, so the use of tapioca flour can reduce the water content in cookies and make the texture more crispy. The use of stabilizers plays an important role in maintaining stability and texture of cookies. CMC, as one type of stabilizer that is tested, has proven effective in improving the texture and levels of beta -carotene in cookies.
