The Effect of the Ratio of Flour and Various Types of Mocaf on the Physical Characteristics of Chemicals and Sensory Flat Wafers

Introduction

Flat wafers are a popular snack food that is widely consumed in many parts of the world. The production of flat wafers typically involves the use of wheat flour as the primary ingredient. P2: 50% : 50%
P3: 25% : 75%

The parameters analyzed included texture, water content, ash content, protein content, fat content, crude fiber content, carbohydrate levels, and hedonic tests (color, aroma, taste, and texture).

Results

The results of this study showed that the more wheat flour used, the physical, chemical, and sensory flat wafer characteristics were closer to control. The best flat wafers were produced from Mocafs dried by sun drying method with a ratio of flour and Mocaf 50% : 50% (M1P2).

Deeper Analysis

This study shows that Mocaf has the potential as a substitute for some flour in making flat wafers. However, the type of Mocaf and comparison with wheat flour need to be optimized to produce the best quality flat wafers.
