Design and Development of Grated Coconut Dryer: A Feasible Solution for Coconut Processing Industry

Introduction

Coconut is one of the most versatile and widely used plants in the world, with each part having a multitude of uses. One of the most popular uses of coconut is the grated fruit flesh, which is then dried to prevent the growth of bacteria. The dried grated coconut can be used as an ingredient in various food products such as bread, biscuits, candy, and coconut milk, as well as a raw material for coconut flour. Given the potential of dried grated coconut, the authors of this study designed and built a grated coconut dryer to increase efficiency and productivity in coconut processing.

Background of the Study

Coconut is a tropical plant that is widely cultivated in many parts of the world, including Indonesia. The fruit of the coconut tree is rich in nutrients and has a high demand in the market. However, the processing of coconut can be a time-consuming and labor-intensive process, which can lead to a decrease in productivity and efficiency. Research Methodology

This study was conducted from April to August 2014 at the Agricultural Engineering Laboratory, Faculty of Agriculture, University of North Sumatra, Medan. The basic fee for the first year was Rp. 15,391.36, which later decreased in the following years to Rp 13,739.39 for the second year, Rp 13,189.49 for the third year, Rp 12,915.02 for the fourth year, and Rp 12,750.65 for the fifth year. This shows that with increased experience and efficiency, operational costs can be reduced over time.

Break Point and Economic Value

In economic analysis, the break-even point of the dryer was found at 752.21 kg/year for the first year, which declined to 405 kg/year in the second year, 290 kg/year in the third year, 232.52 kg/year in the fourth year, and 198.03 kg/year in the fifth year. In other words, the longer this tool is used, the less grated coconut results needed to cover investment costs.

Net Present Value (NPV) and Internal Rate of Return (IRR)

The Net Present Value (NPV) obtained from the analysis was Rp 118,963,293.2, and the Internal Rate of Return (IRR) reached 43.56%. This value indicates that the grated coconut dryer that is designed is feasible to be produced, given the potential benefits that can be obtained.

Conclusion

Based on the results of research and analysis that has been carried out, it can be concluded that the grated coconut dryer that is designed is not only effective in processing grated coconut, but also has an attractive economic value. The lower decrease in operational costs and the achievement of break-even points makes this tool a promising investment for coconut processing industry players. Thus, the development of grated coconut dryers can be a solution in increasing efficiency and productivity in coconut processing.
